Vegan French Toast Sticks with Cinnamon Sugar

These vegan french toast sticks are so easy and quick to make. Tossed in a sweet and delicious cinnamon sugar coating that makes for the perfect weekend breakfast.

Ingredients

  • 3-4 slices of toasted or stale bread (I used Texas thick cut white bread)
  • 1/2 cup non dairy milk
  • 1 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 1/2 tbsp ground flaxseeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2-3 tbsp vegan butter for pan frying

Cinnamon sugar coating:

  • 1/3 cup granulated sugar
  • 1/2 tbsp ground cinnamon

Instructions

  • To make the cinnamon sugar coating, mix together granulated sugar and cinnamon until combined. Set aside.
  • In a medium bowl, combine the non dairy milk, sugar, cornstarch, ground flaxseeds, cinnamon, and vanilla extract. Mix to dissolve the cornstarch.
  • Slice your toasted or stale bread into 3-4 pieces to look like sticks.
  • Add the vegan butter to your frying pan over medium high heat and melt. Dip your sticks into the batter and then flip and dip the other side to coat.
  • Add your soaked bread into the pan and cook for 2-3 mins on each side or until golden brown on both sides (If its browning to quickly, lower the heat).
  • Toss the warm French toast sticks in the cinnamon sugar mixture to coat.
  • Serve with a maple syrup and fresh berries. Enjoy immediately!

Notes

  • Toasted or stale bread works best. Fresh bread tends to be more delicate to work with and makes for soggy sticks.
  • Don’t soak the bread for too long, a couple seconds on each side is good enough. 
  • Make sure your pan is pre-heated over medium-medium high heat, you want the pan to be hot when you add the French toast sticks. This will help cook the batter immediately, creating a crispy exterior.
  • Don’t overcrowd the pan, make sure you leave a bit of space between each stick to ensure they cook and brown evenly.
