To make the cinnamon sugar coating, mix together granulated sugar and cinnamon until combined. Set aside.
In a medium bowl, combine the non dairy milk, sugar, cornstarch, ground flaxseeds, cinnamon, and vanilla extract. Mix to dissolve the cornstarch.
Slice your toasted or stale bread into 3-4 pieces to look like sticks.
Add the vegan butter to your frying pan over medium high heat and melt. Dip your sticks into the batter and then flip and dip the other side to coat.
Add your soaked bread into the pan and cook for 2-3 mins on each side or until golden brown on both sides (If its browning to quickly, lower the heat).
Toss the warm French toast sticks in the cinnamon sugar mixture to coat.
Serve with a maple syrup and fresh berries. Enjoy immediately!
