Vegan Teriyaki Sauce

Every pantry should have this homemade vegan teriyaki sauce. This 10-minute recipe calls for just six simple ingredients. Whether drizzled on sushi rolls or tossed in a stir fry, teriyaki is sweet, savoury, and downright delicious.

Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup granulated sugar
  • 1/3 cup mirin
  • 1/3 cup water
  • 1 tbsp minced ginger
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp cornstarch

Instructions

  • Combine all teriyaki sauce ingredients in a small pot or saucepan, whisking to ensure the cornstarch dissolves. 
  • Bring to a boil over medium-high heat, then reduce to medium and simmer while stirring for 5-6 minutes until it slightly thickens.
  • Remove from heat, noting that it will further reduce upon cooling. Let it cool completely before transferring it to a glass jar with a lid or sealed container. It yields about 1 cup of sauce.

Notes

  • Adjust the sauce thickness to your preference by adding more cornstarch or a splash of water to thin it.
  • To make spicy teriyaki sauce add 1/2 to 1 tsp of red chili flakes or Sriracha to taste.
  • How to store, cool completely, transfer to a jar with a lid or airtight container and refrigerate for a week.
